Ingredients:

1 stick of butter

2 cups of onions chopped

1 can of Cream of Mushroom soup

1 lb of Velveeta cheese

2 cups of cooked rice (I use one package of Success Boil-in bag for simplicity)

3 packages of chopped broccoli

1 large can of Durkee Fried Onions

Directions:

Combine Cream of Mushroom soup and Velveeta in large saucepan until melted.  This can be very tricky, make sure not to burn the cheese.  You may even want to melt the Velveeta in the microwave first and then combine it with the soup. Saute butter and onions in medium frying pan until soft.  Cook broccoli per package directions and drain. Cook rice per directions as well.  Add all ingredients to the cheese and soup mixture and mix well.  Pour into an ungreased 13 x 9 inch pan.  Refrigerate until needed.  Cook at 350 degrees for 30-40 minutes or until heated through.  You may stir this once or twice to insure even heating.  At the end top with Durkee Onion Rings and put back into the over for just a couple of minutes. Onion rings burn very very fast so make sure to check them.  ENJOY!
