Giant Eclair Ring

1 cup water

1 stick butter

¼ tsp salt

1 cup flour

4 eggs

Combine water, butter & salt and bring to boil and turn heat off.  Whisk in flour and eggs. Drop mixture by tablespoon onto greased cookie sheet in a circle clockwise 12-3-6-9 o’clock forming a ring with spatula.  Bake at 400 for 40-50 minutes in lower part of the oven.

Filling

1 8oz container of heavy cream

2 pkg of vanilla instant pudding

2 & ¼ cups of milk

1 tsp vanilla

Beat together until thick and refrigerate overnight

Putting it together:

Cut ring in half and fill with pudding mixture.

Chocolate drizzle

Melt 2 TBL of butter with 2 TBL water and 1 oz square semi-sweet chocolate.  Add 1 cup of confectioner sugar.  Consistency should poor easily without having to spread but not too runny
